Produced in the eponymous town in Le Murge and in the municipalities of Cisternino and Fasano. The grape varieties are: Verdeca, Bianco d’Alessano, Fiano, Bombino bianco and Malvasia Bianca. After harvesting, the whole grapes are soft pressed, followed by controlled-temperature fermentation. It has a light straw-yellow colour and a characteristic, delicate bouquet.
